Moringa & Basil Pesto

Ingredients

  • 2 tbsp Moringa leaves
  • 2 tsp fresh basil leaves
  • 2 tsp fresh parsley
  • 1 tbsp toasted pine nuts
  • Zest of 1 lemon
  • 1 clove peeled garlic
  • 1 tbsp grated parmesan (add more if you like it really creamy)
  • Pinch kosher salt
  • Pinch freshly ground black pepper
  • 1 tbsp extra virgin olive oil or avocado oil

Note: Feel free to adjust the ingredient quantities to suit your taste.

Instructions

1. Gather Your Ingredients

Before you begin, make sure you have all your ingredients ready. The fresh and aromatic components of this pesto, like basil, parsley, and lemon zest, will provide a burst of flavor that complements the earthy notes of Moringa perfectly.

2. Combine Ingredients in a Mortar & Pestle

Place the Moringa leaves, fresh basil leaves, fresh parsley, toasted pine nuts, lemon zest, peeled garlic clove, grated parmesan, a pinch of kosher salt, and freshly ground black pepper into a mortar and pestle. Start with only half of the olive oil or avocado oil at this stage.

3. Start Grinding

Using your mortar and pestle, begin grinding, bashing, or crushing all the ingredients together. This process allows the flavors to meld and the oils to be released. Don't forget to add the remaining half of the oil halfway through the process. Continue grinding until the pesto reaches your desired consistency. Some people prefer it smoother, while others like it a bit chunky – the choice is yours!

4. Cook Your Pasta

While you're preparing the pesto, bring a pot of salted water to a boil and cook your pasta according to the package instructions until it's al dente. Remember to reserve a cup of pasta water before draining, as it can be used to adjust the consistency of your pesto sauce later.

5. Mix and Serve

Once your pesto is ready and your pasta is cooked, it's time to bring them together. Drain the pasta and transfer it to a mixing bowl. Add your freshly made Moringa and Basil Pesto to the pasta, tossing it gently to coat each strand. If the pesto seems too thick, you can thin it out with a bit of the reserved pasta water.

6. Enjoy!

Serve your Moringa and Basil Pesto Pasta hot, garnished with a sprinkle of grated parmesan and some fresh basil leaves for an extra pop of color and flavor. This dish not only looks stunning but also packs a nutritional punch with the addition of Moringa leaves, which are rich in vitamins and antioxidants.

This unique pesto sauce combines the earthy goodness of Moringa with the fresh and zesty notes of basil and lemon, creating a delightful symphony of flavors. It's a fantastic way to elevate your pasta game while incorporating the health benefits of Moringa into your diet.

So, why wait? Whip up this Moringa and Basil Pesto Pasta for your next meal and treat your taste buds to a culinary adventure they won't soon forget!
